Pastis West Palm Beach is scheduled to open at The Nora Hotel in fall 2026, bringing the celebrated Parisian-brasserie concept to one of the city's fastest-growing districts. The restaurant will occupy the ground floor of the new hotel in the Nora District, giving West Palm Beach a version of Pastis designed around the full rhythm of an all-day French brasserie.
The setting is ambitious. Pastis has been announced for approximately 13,300 square feet within the 201-room Nora Hotel, a property developed with hotelier Sean MacPherson and BD Hotels. The hotel's design pairs Palm Beach architectural character with a moodier downtown sensibility, a fitting backdrop for a restaurant known for making a meal feel polished without becoming overly formal.
French brasserie classics from breakfast through dinner
Pastis describes the West Palm Beach menu through enduring French favorites rather than reinvention for its own sake. Buttery croissants will set the tone at breakfast, while later meals are expected to move through steak frites, coq au vin, French onion soup, and a plateau de fruits de mer. Crème brûlée provides the natural finish.
That range is central to the appeal of a brasserie: coffee and pastry in the morning, a long lunch, cocktails at the bar, or dinner by candlelight can all belong to the same room. Pastis West Palm Beach is being positioned to carry that versatility into The Nora Hotel, serving hotel guests while also operating as a neighborhood destination for the wider Palm Beaches.
From the Meatpacking District to South Florida
Pastis first became closely associated with New York's Meatpacking District, where its lively dining room helped define the modern idea of a downtown French brasserie. STARR Restaurants later brought the concept to Wynwood, establishing its first South Florida counterpart and showing how the restaurant's familiar French menu and convivial atmosphere could adapt to a warmer setting.
West Palm Beach will become the next Florida chapter. The location is distinct from Pastis Wynwood, but the connection gives diners a useful preview: classic cooking, an energetic room, and a restaurant designed for lingering rather than rushing through a meal. Its arrival also expands a South Florida portfolio that already moves comfortably between Japanese dining, French brasserie cooking, and two very different steakhouse experiences.

Pastis Wynwood
Pastis Wynwood is the most direct sister to the new West Palm Beach restaurant. The Miami location brought the brasserie's French classics and spirited dining-room energy to Wynwood, complete with an outdoor garden suited to South Florida. It provides the clearest sense of the food and hospitality lineage coming north to The Nora Hotel.
Slim's
Slim's is STARR Restaurants' steakhouse at Bal Harbour Shops. Its glamorous dining room and steakhouse menu show another side of the group's Florida presence: more cinematic and club-like than Pastis, but similarly built around a strong sense of occasion.
Steak 954
Steak 954 at the W Fort Lauderdale is the group's established boutique steakhouse on the Broward coast. It pairs prime steaks and seafood with a contemporary hotel setting, giving Pastis West Palm Beach a nearby sister restaurant with its own long-running approach to destination hotel dining.
What to know before opening
Pastis West Palm Beach remains a coming-soon restaurant, and fall 2026 is the current official opening window. Final hours, reservations, and the complete opening menu have not yet been released. For now, the essentials are clear: Pastis is bringing its French-brasserie identity to the ground floor of The Nora Hotel, with an all-day menu and a scale intended to make it one of the district's signature dining rooms.
For West Palm Beach diners, the opening will add a recognizable French restaurant to the Nora District while extending STARR Restaurants' South Florida family beyond Miami, Bal Harbour, and Fort Lauderdale. The result should feel less like a copy of another location and more like Pastis translated for its new hotel and neighborhood.
