Opening night at the Palm Beach Food & Wine Festival is less about fitting in another meal than setting up the ticket you already bought. On Thursday, Dec. 10, the current schedule places events at Florie’s, Stage Kitchen & Bar and Oceano. The first two are multi-course seated dinners; Oceano is a walk-around tasting. All begin at 7 p.m., but each calls for a different daytime strategy.
The key is restraint. A five-course dinner with wine pairings does not need a restaurant appetizer beforehand. What it may need is a late coffee, a comfortable meeting point for friends or a post-event option for anyone not attending. Use this guide to fill those gaps without competing with the main event.

Florie’s: make Palm Beach the whole evening

Chef Mauro Colagreco’s restaurant centers Mediterranean flavors, live-fire cooking and Florida ingredients, so the ticket is already a complete dinner rather than the first stop of a crawl.
Keep lunch light and arrive at the resort with time to settle in. If the group wants to meet earlier, Sant Ambroeus on Palm Beach offers a useful café alternative: espresso, pastries and a Milanese setting that can feel special without becoming a second full meal. Its Palm Beach location also serves breakfast, lunch and dinner, but on this particular day the coffee bar is the smarter play.
After Florie’s, let the resort be the nightcap unless there is a firm reservation elsewhere. Moving from the south end of the island after a paired five-course meal adds logistics without improving the evening. Stage: keep the plan in Palm Beach Gardens
SPICE at Stage Kitchen & Bar is also a four-course seated dinner, paired with Bouchaine Vineyards wines. Treat 7 p.m. as dinner, not as a tasting that requires backup food.
Café Chardonnay is nearby, but it works better as an alternative for companions without SPICE tickets than as a pre-dinner stop for ticket holders. Give it a separate reservation and a separate appetite. For the Stage guests, a relaxed afternoon and one opening-night destination is the more enjoyable plan.
If everyone wants to gather after the event, choose a bar convenient to the group’s hotel and confirm its Thursday hours. Festival dinners can run longer than their starting time suggests, particularly when every course includes a pour and a visiting-chef introduction.
Oceano: eat lightly before the walk-around tasting
PBFWF at Oceano is the one Thursday event that changes the calculation. The schedule describes it as a walk-around tasting rather than a seated dinner. Small plates arrive over time, and guests may spend as much attention on the room and the wines as on any single dish.
Do not arrive hungry enough to chase the first tray through the crowd. A light, early meal or substantial snack is sensible, but leave space for the tasting. If you are staying on Palm Beach, Sant Ambroeus can handle an early aperitivo-style stop. If your day begins in Palm Beach Gardens, eat there before traveling south rather than trying to cross the county at the last minute.
After Oceano, keep the next decision flexible. Some guests will feel they have eaten dinner; others may want something small. A late reservation should be optional and easy to cancel within the restaurant’s policy, not the centerpiece of the plan.
One ticket, one neighborhood
Palm Beach and Palm Beach Gardens can look close on a map, but Thursday traffic and resort arrival time make event-hopping a poor bet. Build the afternoon around the venue on your ticket, allow a buffer for parking or valet service, and save the other restaurants for another festival day.
